Yang Cheng Lake in Suzhou gained the highest reputation in raising the best hairy crab and also with longer history. September in Lunar Calendar is the right time to eat female crabs as it is mature almost one month earlier than male. Therefore, the richest taste of crab roe can be enjoyed. For those who want to enjoy a care free meal, Dragon Inn experienced Chef, Mr. Chow Man Wing, introduces an extensive Yang Cheng Lake Hairy Crab Menu for savoring. Mr. Chow is a Shanghaiese, all the crab dishes are prepared in traditional Huai Yang style. The steamed hairy crab ($248/pc) keeps its fresh original taste. The best size is 6 to 7 taels per piece, which has the balance portion of crab meat and golden roe. For each order of hariy crab in 4 taels or above, guests can choose different cooking methods for free: steamed, fried with fried rice or Stir-fried with Shanhainese Pudding.

Besides steamed hairy crab, it can be made into varied dishes. The chef takes out the crab meat and roe to cook them with ingredients like vinegar, Chinese wine, ginger etc. Other forms of delicacy surely impress everyone’s palates. A deluxe choice “Braised Shark’s Fin Soup with Crab Roe” ($280) is made in delicious broth prepared with chicken, ham and ribs. The crab roe is melting into the shark’s fin to mix a perfect taste.
