With skillful hand in Italian cuisine, he is showing the cooking magic in the Hotel’s Italian Restaurant, Avanti Ristorante. He has thrown in new taste to the lunch and dinner menu. While the tailor-made new Chef Menu combining wide array of Italian dishes should not be missed.
Chef Tsui has 38 years experience in Hotel. He had worked in renowned hotels in Hong Kong, such as InterContinental Hong Kong, former Regent Hotel, Renaissance Kowloon Hotel, The Peninsula Hong Kong. He specializes in western cooking, particularly in Italian cuisine. To keep the genuine taste of fine ingredients is his cooking secret. No matter it is a traditional bite or a fushion attraction, all food by his hand are elaborately made.
Chef Tsui demonstrates this culinary magic by the newly featured Chef Menu. Highlights include Crab Cake in “Louisiana” Style with Avocado Guacamole ($88), the golden shell is crispy with slices of crab meat inside. Diners should not miss out the Supreme Marine Sampler ($108) serving daily special seafood including King Crab Leg, Grilled Scallop Tartar and Seared Prawns Herb Salad and Chili Red Onion Salsa. The seafood is mixed with a few herbs that delivers the simple and original taste. Chef Tsui also picks some traditional Italian dishes to present a truly Italian fare. Tasty choices include Pan-fried Barramundi Fillet with Bell Pepper, Ragout and Potato Gnocchi ($188), Lamb Cutlet Wrapped with Parma Ham, Ratatouille and Potato Pancake ($218) and U.S. Beef Tenderloin with Baked Polenta, Asparagus and Vegetable Ragout in Red Wine Reduction ($258). Cheese lover will be mad for the Ravioli Stuffed with Spinach and Ricotta Cheese with Oven-dried Tomato ($108). The Ricotta Cheese is light yet creamy that serves incredibly with Ravioli and vegetables. The Cranberry Almond Crostata with Almond Ice-cream ($78) is so delectable as a round off for the meal. It is full of cranberry and almond aroma in every bite.
