In celebrating the year of the Dragon, Regal Palace of Regal Hongkong Hotel wishes guests a prosperous year with a parade of traditional New Year delicacies. All are meticulously prepared by the Executive Chinese Chef of Regal Palace, Ko Chi Man, with a selection of fine ingredients and traditional cooking methods.
During Chinese New Year, Chinese used to enjoy a feast with family to welcome the New Year comes. From 23 to 29 January 2012, 10 different kinds of Chinese New Year dishes will be available to bring guests good luck and good health in the year of the Dragon.
Typical ingredients like black moss, dried oyster, sea cucumber and fish maw are selected to immerse guests in the festivities. Chinese New Year dishes include Braised Fish Maw, Goose Web and Chinese Mushroom in Casserole, Simmered Grouper Fillet in Fish Soup, Sauteed Scallop with Black Truffle Sauce, Steamed Milk Custard with Seafood and Crab Roe, Stir-fried Fish Maw, Sea Cucumber with Celery, Braised Beancurd Sheet with Bamboo Pith and Lily Bulb, Stewed Pomelo Peal with Sea Cucumber and Shrimp Roe, Braised Fish Maw with Carrot and Vegetables, Casserole of Dried Oyster, Ox-tongue and Black Moss and Stewed Pigeon with Soya Sauce. All of them are priced from $118 each.

Chef Ko especially loves to make use of different ingredients and blend with Cantonese cooking technique to tantalize guests with creative and exquisite dishes.
