Located between the North and South America, The Caribbean Sea comprises more than 7,000 islands including Cuba, Jamaica, etc. The food of the region makes use of the herbs available in the islands, creating an unique food culture in the region.
 
This March, the culinary team of Regal Riverside Hotel combines the islands’ delicacies with their creative mind and turned L’Eau Restaurant into a Caribbean fiesta! The seafood bar is packed with freshly flown-in seafood like Snow Crab Legs, and Cold Poached Shrimps. Not to mention the town’s all time favorite, freshly baked oysters with 5 different toppings! Together with a complimentary Jamaica BBQ Tiger Prawn, it is definitely a feast that seafood-lovers should not miss.

Caribbean dishes are also well-known for their BBQ along the coast in the region and it is now available at the poolside BBQ booth at L’Eau Restaurant. Jamaica BBQ Jerk Chicken, BBQ Fish Roll with mixed spices and seasonings in South American style… exquisito! Besides BBQ, fruits are also commonly used in the sauces and the dish itself. The chef has carefully selected refreshing and incredible dishes including Tangy Pineapple Cabbage, Pork Chop with Banana and Bacon, followed by a series of Caribbean Islands’ salads of Baby Lobster and Citrus (Caribbean), Crab Meat Salad (Guyana) 、Martin’s Beef Salad (Jamaica) and more.

Baked Jet-Fresh Oysters in Caribbean Style
Executive Chef Paul Tsui has chosen the jet-fresh juicy oysters from Tasmania sea coast and matched with 5 different toppings and sauces in Caribbean style which perfectly bring out oysters’ freshness and flavour. For those who love hot and spicy, Baked Oyster with Bacon and Cayenne, Baked Oyster with Jalapeno Sauce, Baked Oyster with Cheese and Pimento are definitely their choices. For those who prefer original, Baked Oyster with Cajun Dip or Baked Oyster with Garlic Herb Butter totally fit their taste.

Caribbean Delicacies
Anguillan Lobster Pancake, Dominican Coconut Fish Fillet, Jamaican Blue Mountain Stewed Chicken, Martinique Curry and Coconut Chicken Fricassee, Jamaican Roasted Chicken with Bread Stuffing, Trinidad and Tobago Pelau Rice… are also available from the fantastic kitchen as well.
