Fried Fresh Lobster in Sweet-Chili Sauce
One of the more outstanding dishes are lobsters, not common ingredients of Shanghainese cuisine. The freshness and taste of lobsters matches the rich flavor of sweet-chili sauce. Two fresh lobsters are used per dish, a sure fire creation for seafood lovers.
Stewed Egg Dumplings, Stuffed with Minced Pork in Homemade Sauce
Egg dumplings have been one of the traditional snacks for Shanghai citizens during Chinese New Year. Although it is a common snack, it requires some culinary art to perfect it. Master Chef Chow prepared seasoned pork as filling and wrapped them in a paper-like egg sheets.
Egg sheets are made by pouring thin layers of egg sauce into the frying pan, while watching time and temperature carefully to keep them soft. It is a “must-try” dish to appreciate the Chef’s skill or even art.
Braised Beef with Peking Onions in Brown Sauce
Master Chef Chow selected beef cheeks as ingredients to guarantee tenderness and juiciness of the meat. Beef cheeks have to be braised for three hours with herbs such as Sichuan peppers, star anise and dried longan fruits.
Braised Pork with Dried Preserved Vegetables in Spicy Sauce
The difference between Zhejiang Preserved Vegetables and those from Guangdong is sun-drying and rich sea salt flavor. Master Chef Chow carefully selects pig bellies for this dishes that he brings to a boil for an hour before frying them to a to well-done condition.
After cooling them down with iced water he brings about their chewy texture. Only at that time, he seasons and braises them for two more hours. Finally, he freezes the meat for overnight before braising it again the next day with dried preserved vegetables as well as a spicy sauce. This complicated old Shanghai dish is definitely Le Must!
