Regal Riverside Hotel has been committed to protecting the environment and supporting charitable activities in the society. The hotel fully understands the importance of treasuring food and environment and will launch a “low carbon menu” in July. Executive Chef Paul Tsui carefully selected all ingredients and designed a menu, aiming at reducing energy consumed and carbon dioxide caused in the process of transportation and food processing, so as to optimize harmony with the environment.
“Low Carbon and Environmental Protection” is a hot topic to minimize pollution. Regal Riverside Hotel with ten (10) restaurants and bars as well as fourteen (14) function rooms prepares some 130,000 meals to its guests and employees per annum and is fully aware that every measure counts that reduces pollution.
The “Low Carbon Menu” is based on the following three principles:

Use of local food ingredients – All the food ingredients used in the “Low Carbon Menu” are local ingredients, to reduce greenhouse gas emission during transportation of food from overseas to Hong Kong

Reduce the use of food additives – Food additives are often used in food in order to make it chemically tastier and attractive. In the “Low Carbon Menu”, Chef Tsui aims at reducing the use of food additives in the dishes to fully enhance the natural taste of food and to bring out freshness and its best taste. Sauce or condiments are made of local fresh tomatoes or mushrooms.

Low energy cooking method – The cooking method in this “Low Carbon Menu” consumes less energy than standard cooking methods to reduce energy consumptions during complicated food processing. For example, the Lobster is prepared in water, cut in slices, and presented with Green Apple and Tomato Jelly. The preparation method is simple while the food is fresh and tasty.
