Zhouzhuang cuisine is part of the Huai Yang cuisine family and it is rare in Hong Kong due to its demanding cooking techniques from the chef. Dragon Inn of Regal Riverside Hotel brings the Zhouzhuang specialties and shares the water township flavour with the people in the city. Zhouzhuang Set Menus will be available in March for four persons at HK$880 and for eight persons at HK$1,880.

Zhouzhuang cuisine is particular about its cooking techniques and the use of sauces and herbs. The cuisine is comparatively heavier and sweeter then the others but it can still maintain the greasiness to the minimum. Mr. Man-Wing Chow, the Master Chef of Dragon Inn explains that Zhouzhuang cuisine is good at transforming the general ingredients into something sophisticated and delicate, which emphasizes color, scent, taste and appearance of its gastronomic fare. Fresh ingredients are the essential part of the cuisine and the fresh lake’s seafood is the best pick among the dishes. Cold appetizers are popular in the cuisine and it is not surprising to find 5 different appetizers in a meal. That is why the cuisine is told to be a detail-minded-oriented one.

Recommendations of Zhouzhuang Signature Dishes:

Steamed Eel in Chinese Wine
Chef Chow chooses the dried sea eel from Ningbo and steams it with Huadiao wine, sugar, ginger and shallots to balance the extra sea salt flavour of the eel. Chef then remove the bones and separate the eel by hands into pieces and add in extra Huadiao wine, sesame oil and wolfberries to mix that special scent to the dish, which is then served cold as an appetizer. It tastes especially good with wine, congee and rice.

Bean Curd Sheets with Wild Vegetables
The Shanghai wild vegetables are popular among Shanghai and Huai Yang cuisines due to its special odor. Chef Chow chooses the Shanghai Wild Vegetables and assorted mushrooms as the fillings and rolls them up with the bean curd sheets to give the crispy texture inside while a soft texture from outside. The wild vegetables bring a complex and strong character to make this cold appetizer sensational.

Zhouzhuang Style Duck Soup
Shanghai old duck is the main character of this soup which has to be boiled with huadiao wine, ginger and shallots for at least 2.5 hours to turn into a rich broth. The Chef then adds Jinhua ham, Chinese cabbage as well as bamboo shoots in an earthenware cooking pot to cook for another 1 hour. This soup is definitely rich in flavour and scent.

Steamed Freshwater Reeve's Shad
Reeve’s Shad is a precious lake’s seafood from Hangzhou and it is famous for its tenderness.
Chef Chow puts huadiao wine, wine lees, chicken fat and other seasoning and steams for about 40 minutes. The particular taste and the tenderness of this fish win the heart of those who tastes it for the very first time.
