Lobster and Iberico Dinner Buffet

From now till 2 July 2019, Café Rivoli of Regal Hongkong Hotel launches the new "Lobster and Iberico Pork" dinner buffet, in addition to a series of seafood delicacies and lobster flairs such as Fish Maw in Lobster Soup with Rice Cracker, Lobster and Seafood Pot with Fish Stock and Flambé Lobster in Three Flavors, the Executive Chef of Café Rivoli also uses the juicy and meaty Iberico pork to create an array of thematic dishes includes Roasted Iberico Pork Rack, Barbecued Iberico Pork with Salted Lemon Sauce, Minced Iberico Pork and Herbs Salad with Rice Cracker and Iberico Ham, Plum and Pear Salad and more. Chef specially make use of variety of ingredients, sauces and cooking methods to curate the new menu in order to bring guests different experience of tasting Iberico pork.

 

Barbecued Iberico Pork with Salted Lemon Sauce is made from the grain-fed Iberico pork from Spain which is tender, juicy and has the perfect fat-to-meat ratio. It is cooked differently from the traditional Chinese barbecued char siu that the Executive Chef used the combi oven to bake the pork to medium well, then the pork will be dipped in the sweet and sticky honey and it’s cooked-to-order at the show cooking counter. To balance the oil out and add a refreshing sensation to the dish, Executive Chef has created a homemade salty lemon and plum sauce with is full of fragrance to pair with the barbecued Iberico pork. 

 

Executive Chef references the Vietnamese recipe to create the Iberico Ham Rice Paper Roll. Iberico pork is wrapped together with lettuce, honeydew melon, melon and cucumber in the rice paper, matching well with the special homemade lime-infused fish sauce. The dish tastes sweet, acidic and slightly spicy which makes it a very fresh appetizer for the hot weather. Minced Iberico Pork and Herbs Salad with Rice Cracker is a twist of the traditional of the Thai Minced Pork with Lettuce Wrap. Stir-fried minced Iberico pork with shallots, chili, garlic and Thai basil, serving with the crunchy rice cracker further enrich the texture of the dish.

 

Perfect the evening with a numerous of refreshing desserts like Rouge Melon Pudding, Unshu Mikan Cake, White Peach Dessert Easter Egg Cup, Mars Strawberry Rabbit Cheese Pudding, Black Sesame Mango Baby Chicken Pudding, Mango Napoleon and more.
