Regal Palace at Regal Hongkong Hotel has launched a series of summer seasonal dishes available from 22 June to 31 August 2020. Each dish is specially curated by Chef Christopher Yeung, the executive chef of the restaurant. Chef Yeung brilliantly makes use of seasoal ingredients, combining with the varied Chinese cooking techniques to bring all diners a variety of healthy, refreshing and tasty summer delicacies, including Double-boiled Soup with Conch, Melon and Chicken, Fried Dungeness Crab with Tomato in Homemade Spicy Sauce, Stir-fried Sliced Pigeon with Pineapple, Roasted Beef Rib with Peach and Marinated Duck in ChiuChow Style.
Stepping into the summer is also the best time to taste crabs. Fried Dungeness Crab with Tomato in Homemade Spicy Sauce is one of the best options among crab dishes. Chef Yeung prepares the fried Dungeness Crab with his homemade chili sauce with Italian tomatoes, secret chili sauce and herbs, allowing diners to taste an irritating taste in the swelthering summer days. Baked Oyster and Goose Liver with Egg blends the rich egg flavor with the fresh taste of oysters and foie gras to bring diners a delicate taste.The Double Boiled Soup with Chicken, Conch and Melon is made with fresh conch, fish maw and sweet Japanese honeydew melon to nourish your days. Stir-fried Sliced Pigeon with Pineapple is another summer dish that you cannot miss. Absorbing the sweetness of pineapple, the flesh is much more tender and flavorful. Chef Yeung selects the succulent rice duck marinted with Chiu Chow white brine sauce to make the Marinated Duck in Chiu Chow Style ($308 half / $618 full). Using the white brine sauce, the duck tastes light but full of flavor. Chef Yeung specially serves the duck with green mango shreds, green papaya shreds, beetroot shreds and his homemade secret sauce, allowing guests to taste a refreshing summer dish. Meat lovers cannot skip the Roasted Beef Rib with Peach ($428). Chef Yeung selects the top USDA Prime beef ribs which are grilled with apples and pears charcoal, infusing the fruity and smoked fragance ! Pairing with slices of cooked white peaches, the dish is deliciously perfect for your summer.
