The succulent and sweet melons are popular picks as they cope well with a lot of ingredients to present tantalizing dishes. Highlight includes Double-boiled Winter Melon with Assorted Seafood and Lotus Seeds. The whole winter melon is filled with the essence of conpoy, sea conch and other seafood such as sea scallops and shrimps, which is luscious and best for sweeping away the summer heat. For Braised Conpoy and Fish Maw with Marrow, thick sliced marrows are firstly braised to soften the texture and then stewed with conpoy and fish maw. The marrow’s flavour is further enriched with dry seafood essence. Braised Marrow with Conpoy and Dried Shrimps in Fish Broth is a not-to-be-missed choice. The marrow and dried seafood are braised together, infusing the flavours into the fish broth to elevate the taste of the dish.
